Tuna & Cannellini Bean Salad

There are some really good recipes in this book, so let’s start off with one that is very simple to make.

A bowl of this salad with some carrot sticks & a handful of olives makes a perfect office lunch.

But don’t sit in the break room…If you can, take your lunch outside or in your car with the windows down.

You need some vitamin D from the sun after being cooped up at that desk all morning…Stretch your legs.

Keep in mind that this recipe makes 4-6 servings…So you can either have this a couple times for lunch or pack it in your kids lunch too!! 

Tuna & Bean Salad 

2 x 14 oz cans of cannellini beans

2 x 7 oz cans tuna fish, drained

4 tbsp extra-virgin olive oil

2 tbsp fresh lemon juice

Salt & freshly ground pepper

1 tbsp chopped fresh parsley

3 scallions, thinly sliced
