Thai Coconut Soup With Mung Bean Noodles

Mung bean “noodles” or threads are my favorite replacement for flour noodles. They are made from mung beans which are high in protein & fiber.

The mung bean sprouts have the following benefits:

This easy little recipe is so good & comforting. All you need is a package of the mung bean noodles & a can of Amy’s Thai Coconut Soup.

Cook the noodles in water then drain completely. Heat up the soup and then viola! Just add the noodles to the soup and it’s warm coconut comfort!

I suggest once you cook the mung bean threads & drain the liquid, cut them up a little because they are really long.
